Pomegranate Vinegrette Recipe

Pomegranate is rich in ellagic acid and polyphenols, compounds that research suggests may help slow the growth of prostate cancer cells and reduce the risk of recurrence. Adding it to your daily routine doesn’t have to mean drinking juice every day - although 1 cup of unsweetened pomegranate juice or 1 teaspoon of pomegranate powder daily is a great evidence-informed goal.

Here’s another easy and delicious option: a homemade pomegranate vinaigrette. It’s vibrant, full of anti-inflammatory ingredients, and perfect for drizzling over summer salads.

Ingredients:

  • ¾ cup pomegranate seeds (fresh or thawed from frozen)
  • ½ cup extra virgin olive oil
  • ¼ cup pure maple syrup
  • 1 Tbsp lemon juice
  • 1 Tbsp white balsamic vinegar (or regular balsamic if that’s what you have)
  • 1 tsp Dijon mustard
  • Pinch of sea salt

Instructions:

  1. Add all ingredients to a high-powered blender or food processor.
  2. Blend on low, gradually increasing to high, for 30–60 seconds until the vinaigrette is completely smooth  and the seeds are fully broken down.
  3. Pour into a glass jar and store in the fridge for up to 5 days.

Tips for Enjoying It:
Toss with mixed greens, cucumbers, and walnuts for a fiber-rich, heart-healthy salad.
Drizzle over roasted vegetables for a sweet-and-savory twist.
Use as a marinade for tofu, tempeh, or grilled vegetables.
