Crispy, Roasted Chickpeas

We commonly recommend plant-based sources of protein as part of a healthy Mediterranean diet, which has been connected to a lower risk of cancer. Common sources of plant-based protein are lentils, beans, and chickpeas. These healthy foods can be part of your main meal or they can be eaten as a delicous snack. Next time you want to try a savoury snack in the middle of your busy day, try these crispy roasted chickpeas:



  1. Drain one can of chickpeas and pat them dry using a paper towel

  2. Remove any chickpea shells that may loosen in the process

  3. Transfer dry chickpeas to a large mixing bowl and add 1 tsp salt

  4. Mix thoroughly

  5. Add in your flavour: 2 tablespoons lemon juice, 1 teaspoon lemon zest, ½ teaspoon pepper, ½ teaspoon salt

  6. Spread the chickpeas out on a lined baking tray and bake for 45 minutes at 200C/400F

  7. Stir every 15 minutes

  8. Remove from oven and let cool
