Egg Bite Recipe

Protein is an essential macronutrient for: tissue repair, maintaining a strong immune system and preserving lean muscle mass, which are all important goals in cancer care. When our bodies don’t get enough protein, they start to break down muscle tissue for amino acids, which are the building blocks of protein. During times of stress, like when faced with a cancer diagnosis or the treatments that follow, our requirements for protein increase further. Keeping an awareness of how much protein you are consuming throughout the day is therefore important, especially if undergoing any treatments that place added stress on the body.

 

One of the best sources of complete protein is eggs. Below is a delicious egg bite breakfast recipe that we encourage you to try, as it can offer a significant protein boost at the start of your day!

 

Ingredients (12 muffins):

5 eggs

1 cup cottage cheese (for extra fluffiness and protein)

¼ cup unsweetened, plant-based milk of choice

1 cup chopped veggies of your choice (e.g., onion, peppers, mushrooms, tomatoes, chives)

¼ cup cheese (optional)

Fresh cracked pepper to taste

 

Directions:

1.     Preheat oven to 350 degrees Fahrenheit.

2.     Grease a muffin pan and set aside.

3.     In a large bowl, whisk together all ingredients.

4.     Pour mixture into the pre-greased muffin pan, filling the slots halfway.

5.     Top with cheese if desired.

6.     Place the muffin tray in the oven for 20 minutes.

7.     To ensure a fully cooked egg, insert a thin blade knife or a toothpick into the center of the muffins. If it comes out clean, the dish is done. If not, place it back in the oven for a few minutes and test again.
