Do you feel like you don’t have enough time to make yourself a delicious and nutritious breakfast in the morning? With this easy and delicious overnight oats recipe, we’ve got you covered!
Overnight oats are a quick and easy breakfast you can make by soaking rolled oats in liquid overnight. It only takes 5 minutes to prepare and is perfect for when you need a quick breakfast or snack, especially on hectic mornings. This recipe is high in fibre and protein, making it not only a convenient option, but healthy and satisfying as well. Overnight oats will keep in the refrigerator for 2-3 days, so feel free to make multiple servings at once to save you even more time.
Ingredients (1 serving)
- ½ cup plant-based milk (e.g. almond, oat, soy, etc.)
- 1 Tbsp chia seeds
- 2 Tbsp nut or seed butter (e.g. almond butter, cashew butter, peanut butter, etc.)
- ½ cup rolled oats
- Optional sweetener: 1 Tbsp maple syrup or to taste
- Optional toppings: berries or any fruit, dark chocolate chips, cinnamon, nuts and seeds (e.g., crushed walnuts, pumpkin seeds, hemp seeds, ground flax, etc.)
Directions
- To a mason jar or small bowl, add the plant-based milk, rolled oats, chia seeds, nut/seed butter, and maple syrup (optional) and stir with a spoon to combine.
- Add desired toppings as listed above. I personally like to top my overnight oats with a variety of different berries, cinnamon, dark chocolate chips, walnuts, pumpkin seeds, and hemp seeds!
- Cover securely with a lid or seal and leave in the refrigerator overnight.
- The next day, open and enjoy!
