Holiday Cranberry Coconut Fat Bomb Recipe

When it comes to healthy eating habits, the holidays can often be a challenge. Many festive snacks and treats are high in carbohydrates and sugar, however, this “fat bomb” recipe is a delicious alternative that can help stabilize blood sugar levels. Coconut oil contains healthy fats called medium chain triglycerides (MCTs), which are known to help promote fullness, aid in weight management, and can act as a sustained energy source throughout the day. Goodbye, sugar crashes!

 

Ingredients (18 servings):

¼ cup coconut oil

¼ cup raw honey 

1 cup coconut butter

1 tsp. vanilla extract 

¼ cup dried unsweetened cranberries 

¼ cup unsweetened shredded coconut

 

Directions:

1. Melt coconut oil, honey, and coconut butter in a saucepan over low heat. 

2. Add vanilla extract and whisk until well combined.

3. Pour mixture into lined muffin tray or cups. 

4. Sprinkle cranberries and shredded coconut evenly over each cup.

5. Refrigerate for one hour or until set and enjoy! 

 

Notes:

• For additional festive flavours try adding: lemon or orange juice/zest, cinnamon, nutmeg, pumpkin spice, to taste. 

• Add nuts for more protein, fat and nutrients: almonds, walnuts, brazil nuts, cashews, pecans.
